I've had a set for three years; two with heavy use on a gas range, and one year in storage. Not sure when it happened, but both plates are warped. I also have a set of the less expensive Nordicware, and while they're not as efficient (especially on a low flame), they're in better shape after equally heavy use.

Just put it on the stove and heating it up right now. The reason I got this one is because it was the only one I could get in a 9" which fits my burners to a "T". Otherwise I would have opted for a cheaper one.

Anyway, the surface looked so slick when I pulled it out of the package I was afraid if I shook the pan the plate would fall off the burner so I almost returned it unused. I tested sliding heavy fry and saute pans and unbelievably it remains stationary. i wonder how they did that?

Ok, so it's nice and hot now and I cant get it to budge off the burner by sliding and shaking the heavy pot full of ham and beans across it. NICE!

I bought two of these because I can't afford the expensive cookware that cooks evenly and I have 10 lbs of veal bones sitting in my freezer for months now waiting on a decent pan to make demi glace. Still don't have the pan, but I know now I can put my cheap pan from oven to stove top and deglaze without scorching the pan or the bones and mirepoix. EEh Yah!

To justify spending this much money on these plates I told my husband, it's a lot cheaper than buying the $1000s of dollars worth of pans I need. So I just turned my cheap cookware into something really special and expensive for under $100.00.

I'll try to update as far as the evenness of the cooking goes.

Off to thaw some veal bones!

Update: I cooked the beans til almost dry in my cheap flimsy pan and they did not scorch or stick! This is a winner! Now I know what it's like to have expensive pans. Woo hoo!!
